Prawns In Peanut Sauce With Courgette Noodles  
Quick, easy, and much cheaper than a takeaway. Serves 2. The portions look small but trust me, this is rich and filling!



Ingredients

  • 1 inch piece of ginger, peeled and grated

  • 2 large courgettes (zucchini), made into noodles (see instructions below)

  • 2 carrots, peeled and finely sliced

  • 2 sticks of celery, finely sliced

  • 1/2 a red bell pepper, cut into thin strips

  • 1/2 cup peanuts

  • 1 1/2 cups frozen prawns, defrosted

  • 3 dessertspoons smooth peanut butter

  • Splash soy sauce

  • Vegetable and seasame oil to fry

  • Salt for making noodles

Method

To make the courgette noodles:

  • Peel each courgette and discard peel

  • Use your vegetable peeler to peel off ribbons of courgette

  • Stop when you get to the rougher part in the middle as that doesn't make good noodles

  • Chop middles into chunks and leave aside for later

  • Place noodles in a colander

  • Toss with salt

  • Cover with a clean towel or paper towel and press with tins of beans, bags of flour etc

  • Leave for half an hour or more

To make the prawns in sauce:

  • Gently stir fry the ginger in a little oil for a minute or two.

  • Add carrots, celery, pepper, prawns, peanuts and chopped courgette middles and gently sir fry until just soft. I used vegetable oil and added a splash of sesame for flavour. Change your veggie to sesame oil ratio depending on your taste.

  • Place 3 dessertspoons of peanut butter and a splash of soy sauce into a bowl.

  • Add freshly boiled water, whisking all the time, until the sauce is smooth and glossy. Make it as thin or as thick as you like (I prefer mine thick).

  • Pour sauce over prawns and veg, stir through and heat gently for a minute or two

  • While sauce is heating, gently stir fry your noodles in a little bit of oil (in a separate pan)

  • Serve prawns and veg in sauce over noodles.


Variations

  • Omit the peanuts for a smoother finish

  • Alternatively, omit the peanuts but use crunchy peanut butter, for a chunky sauce

  • Leave the prawns out for a vegetarian version
